Jerrod,
If there is a dispute as to the pre loss value of the demolished structure, the policy will usually contain an appraisal provision.
If what you are talking about is a demolished building only, a competent disinterested residential or commercial appraiser should suffice. If the demolished property involves contents or equipment you should contact a PA who can refer you to an insurance "appraiser" as opposed to a residential or commercial "appraiser"
